All of the Ancient and Heritage grains we use are organic, fresh, locally sourced wherever possible, and always fresh-ground in-house. The bread's only ingredients are flour, water, and a bit of salt. The wild yeast is fermented naturally, ('naturally leavened') which enhances any sourdough's taste and nutritive content. The superior taste and increased nutrient value we achieve is by way of our handcrafting and our enhanced three-day fermentation process. In promoting our bread we rely on a 'Taste & See' protocol believing that to be the most effective way of demonstrating it's full richness.
